Slow-Cooker Sweet and Sour Beef

- 2 tbsp (30ml) sugar
- 4 tbsp (60ml) cornstarch
- ½ cup (120ml) rice vinegar
- ½ cup (120ml) hoisin sauce
- 3 cups (750ml) beef broth
- 2 tbsp fresh ginger, finely chopped
- 2 lbs (1kg) boneless beef scoter or chuck roast or stewing beef cut into 2 inch chunks
- Put everything but the beef in the slow cooker and stir
- Add the cubed beef
- Cook on low for 5-6 hours
- serve with rice and a green vegetable
