Easy One Bowl Pancakes

- 220g flour
- 45g sugar
- 3 tsp (14g) baking powder
- 1½ tsp (10g) salt
- 2 eggs
- 1½ cups (350g) milk
- 3 tbps (20g) vegetable oil
- butter for cooking
- maple syrup and berries for serving
- Combine all the ingredients in a bowl.
- Whisk. There will probably be a few lumps. This is OK.
- It should be fairly thick. You may want to add a little more flour or water 1 tbsp at a time to get the right consistency.
- Heat frying pan up to a medium high heat and melt some butter
- Using a soup ladle, scoop around ½ cup of batter into hot frying pan.
- Fry until brown and flip. Fry until other side is brown.
- Serve with maple syrup and fruit.
