Family Mealtime: Coconut-Beef-Rice

photoSo, here’s the thing.  I don’t actually have any decent photos of this dish – just a pretty crappy photo of my son eating it.  But, the food is nearly all gone from his bowl, which I think says something.  This dish has to be one of the cheapest dishes to make, and everyone seems to love it.  It’s also easy, and one pot.  I don’t know about you guys but in our household I make and we all eat the same thing.  This has become one of our staples.  The original recipe had some thai curry paste, but I left it out and it’s just as yummy!

Coconut Beef Rice

adapted from BBC Good Food Sept 2010

1 tbsp olive oil

1 onion, finely chopped

500g minced beef

350g basmati rice

600ml chicken stock

400g can coconut milk (full fat)

140g frozen peas

  • Cook the onion until soft in a large pan
  • Add the beef and fry until brown
  • Add the stock, coconut milk and rice
  • Bring to a boil and then simmer gently for 10 minutes.  At this stage check your rice.  You may want to add more stock or water.
  • When the rice is done add the peas and cook for a couple minutes more.
