Easy Nutella Swirl Cupcakes

I had the sudden urge to bake something the other day despite the fact that I did not have a lot of time on hand.  These Nutella Swirl Cupcakes looked perfect.  They are easy, not so sweet, and bake up exactly twelve. I promised my husband they would whip up in ten minutes.  In the end, it took around 15 but I hate to say that’s partially due to me dropping an eggshell in the mixer while it was still spinning.  Yucks.  Thank goodness it was a brown shelled egg.

Warning – the batter is thick.  It makes it tricky to swirl the Nutella, but it doesn’t have to be perfect does it!  The cakes are really quite dense in the end, but are still lovely.  Perfect for when you want something not so sweet.

Nutella Swirl Cupcakes
from Baking Bites

10 tbsp unsalted butter, softened (140 grams)
3/4 cups white sugar
3 eggs
1/2 tsp vanilla
1 3/4 cups all purpose flour (200 grams)
2 tsp baking powder
Nutella

  • Preheat oven to 325 degrees and line 12 cupcake tins with liners
  • Beat the butter and sugar together until fluffy
  • Add the eggs and incorporate one at a time (try not to drop the shells in!)
  • Add vanilla
  • Add flour.  Do not panic – it will be thick!
  • Add the baking powder
  • Scoop into the 12 cupcake holes.  For me this made exactly 12 cupcakes
  • Drop about 1 tsp Nutella on top of each cupcake.  Do your best to swirl in the cupcake
  • Cook for about 20 minutes or until toothpick comes out clean.
  • Let cool completely on a wire rack.
Tip: Try to fold some of the Nutella under the batter to hold it in once cooked.
