Slow Cooker Maple Syrup-Ginger Chicken

- 2 chicken breasts, skin removed
- ¼ cup low-sodium soy sauce
- ¼ cup maple syrup
- 1 tbsp minced ginger
- 1 tsp rice vinegar
- 1 cup chicken stock
- rice to serve
- optional: sesame seeds and cut up green onion for garnish
- Place everything but the chicken in the slow cooker and mix.
- Add the chicken so it overlaps as little as possible. There's no need to cut it.
- Slow cook for four hours on low.
- Serve over rice and complete with a side of veggies.
