Easy One Bowl Pancakes

This easy recipe for pancakes can be made in one bowl by using a kitchen scale.
  • 220g flour
  • 45g sugar
  • 3 tsp (14g) baking powder
  • 1½ tsp (10g) salt
  • 2 eggs
  • 1½ cups (350g) milk
  • 3 tbps (20g) vegetable oil
  • butter for cooking
  • maple syrup and berries for serving
  1. Combine all the ingredients in a bowl.
  2. Whisk. There will probably be a few lumps. This is OK.
  3. It should be fairly thick. You may want to add a little more flour or water 1 tbsp at a time to get the right consistency.
  4. Heat frying pan up to a medium high heat and melt some butter
  5. Using a soup ladle, scoop around ½ cup of batter into hot frying pan.
  6. Fry until brown and flip. Fry until other side is brown.
  7. Serve with maple syrup and fruit.
