Cheat's Pizza

- 1½ mugs of self-raising flour plus extra for dusting
- ½ mug water
- olive oil
- pizza sauce
- mozzarella cheese
- whatever other toppings you want
- Turn your broiler element on to as hot as it will go.
- Put a large ovenproof frying pan on high heat
- Dust a clean surface with flour
- Put the flour into a food processor or mixer with a paddle attachment.
- Add the tepid water with a pinch of salt and a glug of olive oil.
- Whiz (if using a food processor) or mix (in your mixer) until smooth then place on floured surface.
- Dough will still be very wet
- Sprinkle the top of the dough and rolling pin with flour
- Roll the dough to 1cm thickness.
- Drizzle oliver oil into the pan, then dust the dough with flour again
- Very carefully slide dough into the pan
- Push the edges down into the sides of the pan
- Add pizza sauce and toppings
- Broil for 4 or 5 minutes until golden and cooked through.
