MJ's Apple Muffins

- 2¼ cup flour
- 1 tsp baking soda
- ½ tsp salt
- 1 egg
- 1 cup milk
- 1 tbsp lemon juice
- ½ cup melted butter
- 1 tsp vanilla
- 1½ cups brown sugar
- 2 cups small diced apples
- • Topping:
- ½ cup brown sugar
- ⅓ cup flour
- 1 tsp vanilla
- 2 tbsp melted butter
- Heat the oven to 375F
- To make the topping, in a bowl combine the brown sugar, flour, vanilla, and butter.
- For the muffins, in a large bowl mix the flour and baking soda
- In another bowl mix the egg and milk, lemon juice, butter and vanilla.
- Add the brown sugar to the wet mixture and mix.
- Mix wet ingredients into the dry ingredients.
- Mix until just combined.
- Add the apples to the mixture and mix just until the apples are throughout the batter.
- Fill the muffin liners until they are ¾ full.
- Add the topping
- Cook for about 25 minutes until a toothpick inserted into the middle comes out clean.
