Are we all ready for the insane resolutions we will never keep?

I for one am not for making grand gestures but I do think that trying to eat healthier is always a great goal.  It’s no secret that I am a fan of grain salads.  Unfortunately, they are usually a pain in the ass to make… cooking the grains plus a million different ingredients.  I cut that pain by doing different steps along the way.  Day 1 I may cook the grains and make the dressing.  Day 2 I’ll usually finish off the salad.  Then I don’t get too annoyed with the entire process.

I fell in love with this Fiery Fruit Salad from the book Salad Samurai: 100 Cutting-Edge, Ultra-Hearty, Easy-to-Make Salads You Don’t Have to Be Vegan to Love.  Unfortunately, it is a pain in the ass to make.  You can find the recipe here.  You can see from the above photo I made a few changes to the recipe like using plums instead of peaches, and pepitas instead of toasted pumpkin seeds.  The already toasted pepitas cut down on the prep time.  But next time I wouldn’t even bother to char the corn or fruit.  I’d simply dump corn from the can, and cut up the fruit.  Would that make it any less great?  Maybe… but I think it’s OK.

Update: I actually own this book now and can confirm the salads are amazing but… long to make.  They are kind of like Julia Child’s recipes – they look short and then you realize that within the recipe there are another 2-3 recipes.  Once you had all the toppings and extras on hand they would be pretty easy but until then they are a bit long.  BUT for me – they are worth it and I plan on making EVERY SINGLE ONE (my 2015 challenge 🙂  Anyone else up for the challenge?

      Hi! I buy mine at Loblaws on Cavendish and St. Jacques. It’s a little hit and miss but I’ve seen it on the a shelf above the frozen meats, in the rice section and in the pasta section. It’s Loblaws brand with the black box. I usually buy some if I see it as their stock seems a bit random. If you are in NDG I seem to recall Akhavan carries it but I may be wrong. Good Luck!
