Apple Loaf Cake

I’m really into loaf cakes.  For one, they are usually very easy to make (I think this one took me 15 minutes plus 1 hour 20 minute cooking) and secondly they taste fantastic!

I bought a couple of granny smith apples for another recipe I realized I was not going to make so though I’d go for it and try them in a loaf cake.  This isn’t my first foray into cooking with apples and you can find my recipes for apple muffins, easiest apple butter and apple cake.

Apple Loaf Cake Dry Ingredients

I chose this recipe because of the secret bonus streusel later, and the fact that it used two apples which was the amount I had on hand.  It is a bit sweet, so if you wanted you could cut the streusel in half.  If you wanted…  I converted the entire recipes into weight as I find it SO MUCH EASIER to bake with weight than measuring cups.  Mom – you’re just going to have to get on board with that!

Easy Apple Loaf Cake with a Twist

This easy apple loaf cake has a hidden layer of yummy streusel and is such a snap to prepare.
Ingredients
  • Streusel
  • 120g flour
  • 110g light brown sugar
  • 114g butter, melted
  • 2 tsp ground cinnamon
  • Cake
  • 240g flour
  • 170g sugar
  • 2 tsp baking powder
  • ½ tsp salt
  • 2 eggs
  • 114g butter, melted
  • 2 medium granny smith apples, peeled, cored, and cut into 1cm dice
Instructions
  1. Heat oven to 350F
  2. Butter a 9 x 5 x 3" loaf pan and line with parchment paper for easy removal of the loaf
  3. Streusel: Combine ingredients and set aside
  4. Cake: Combine flour, sugar, baking powder and salt in a bowl until well mixed.
  5. Beat eggs with a fork in a separate bowl until blended. Add the butter and milk and mix until combined.
  6. Stir wet ingredients into dry ingredients until just moistened. Add most of the apples reserving about ¼ cup.
  7. Spoon half the batter into the prepared tin. Sprinkle half the streusel.
  8. Spoon the rest of the batter in and sprinkle top with the rest of the apples and the streusel.
  9. Bake 1 hour 10 minutes to 1 hour 20 minutes or until a wooden skewer comes out clean.
  10. Let cool on work rack for 10 minutes than pull out of the tin using the parchment paper and let cool on wire rack completely.
