Thick European Style Hot Chocolate

It’s been cold and oh so snowy around Montreal these days.  I don’t hate it, but it’s a pain with the stroller.  Even with the sled it’s a bit too wild and wet to be pulling baby.  But, I am Canadian and I choose to live here so I accept and embrace.  On a recent chilly day, the family headed up to Mount Royal, which is the hill in the middle of Montreal that is covered in forest and paths with all sorts of available activities from sledding to cross country skiing.

We didn’t really look at the temperature too much, but when we started pulling our sled we realized it was a bit colder than we were comfortable with for the baby.

We lasted for about 20 minutes.  The baby didn’t complain, but I was cold while walking and I knew that sitting in his little sleigh he’d be chilly.  We turned around, and headed back home.

To warm up, I remembered a hot chocolate that we had discovered while visiting Prague a few years back.  It was unlike any powdered hot chocolate I’d ever had in Canada and I was keen to recreate it.  It was thick, so chocolatey, and decadent.  I found a few recipes, and improvised with what I had on hand.  It was delicious.  I urge you to try it if you never have, but remember a little goes a long way!

Hot Chocolate

 
Ingredients
  • 4 ounces bittersweet chocolate chopped into pieces
  • 1½ cups whole milk
  • 1 cup 35% cream
  • 2 tbsp sugr
  • 2 tsp corn starch
Instructions
  1. Add chocolate and around ¼ cup of the milk to a small saucepan.
  2. Melt the chocolate over low heat stirring the whole time.
  3. Once all the chocolate is melted, whisk in the remaining milk and cream.
  4. Add the sugar and cornstarch
  5. Continue to whisk over low heat until chocolate has thickened to desired consistency. It should coat the back of the spoon. This will take around ten minutes or so.

    It is really cold here and I am having people over for dinner on Sunday. Do you think I could do this as a dessert? Is it substantial enough?

      Well Melissa, it would be a very original desert! I would say yes as long as you let your guests know it’s a drink and not a dessert per say. What original thinking!
