Yes, you read right.  One ingredient ice cream.  That’s it folks!

I learned about this amazing faux ice cream on Food 52 where it was written that this one ingredient banana ice cream has taken the internet by storm.  Really?  I subscribe to an embarrassingly large amount of cooking blogs and I never saw it!

Of course, I wanted to try it immediately.  I cut up three bananas that were yellow with just a few brown spots.  I froze them for an hour, and then threw them in a food processor.  The result?  Well, my husband was immediately suspicious and claimed it wasn’t very sweet.  Well, it isn’t very sweet – I mean, it’s just bananas!  But considering how easy and healthy this is, I’d definitely make it again. Apparently it can be altered by adding other ingredients while the bananas are whipping up.  Suggestions include blueberries, peanut butter and strawberries.

Yum!

One Ingredient Banana Ice Cream

Ingredients:
A bunch of bananas

  • Cut and place chunks on a cookie sheet.  Stick in freezer for 1 – 2 hours.
  • Blend it up!
  • If you don’t finish it, freeze it up and re-blend.
